Pour the 1 liter of water into a pot, add the sugar, honey, and cinnamon stick.

Split the vanilla pod in half lengthwise, scrape out the seeds, and add them along with the whole pod to the rest.

Bring to a gentle boil over low heat.

Peel the pears, leaving the stem end intact.

Brush them with lemon juice.

As soon as the syrup starts to simmer, add the pears and cook for 30 minutes on low heat, turning occasionally to ensure even cooking.

Remove the syrup from the heat and let the pears cool in their syrup.

For serving: cut each pear in half and place two halves of a pear in a bowl, drizzle with a half glass of syrup and garnish with a star anise or a cinnamon stick.

Serve warm or cold.
