In a bowl, mix the yeast with 1 tablespoon of sugar and 25cl of warm water. Squeeze some orange zest.

In a mixer or by hand, combine the remaining sugar, beaten eggs, salt, oil, flour, raisins, and orange zest with the yeast.

Knead until it forms a homogeneous ball.

Cover the dough ball with a towel and let rise for 2 hours. Then, divide the dough into 2 equal parts.

Divide each part into 3 parts and form long dough ropes.

Flour your work surface.

Then braid using the 3 dough ropes. Pinch the ends of the buns and let rise for 1 hour. Preheat the oven to 180°C. Brush the buns with egg wash and bake them for 30 minutes.

Sprinkle some almonds on the buns.
