Mix 3 whole eggs with 75 g of sugar and a pinch of salt.

Add 2 tbsp of flour, gradually diluting it with 2 dl of boiling milk with 1/2 vanilla bean.

Meanwhile, wash 500 g of well-ripe apricots, cut them in half, and remove the pits.

Arrange them on the bottom of a baking dish that also serves as a serving dish, then pour the cream over them.

Bake for about 50 minutes at medium oven temperature.

Serve warm preferably, still in the cooking dish.
