Mix the sugar and water in a saucepan.

Cook slowly on low heat, stirring constantly with a skimmer and removing any foam that forms on the surface.

Once boiling, remove from the heat.

Wash, drain, and pit the cherries.

Poach the cherries (cook the cherries in the syrup at a temperature slightly below the boiling point).

Blend this mixture and strain through a chinois.

Cool rapidly by stirring and add lemon juice.

Check the consistency to 18°B.

Pour the mixture into an ice cream maker.

Keep refrigerated until ready to serve.
