Chebakia
Who can resist the honey cake, chebakia? A classic of Eastern pastry to prepare for dessert!

Melt the butter and pour it into a mixing bowl, adding the sesame seeds, olive oil, almond flour, orange blossom water, vinegar, and anise while stirring.

Continue stirring as you add the flour and yeast, beginning to knead until you get a fairly smooth dough (add more flour if it's too liquid, or orange blossom water in the opposite case).

Cut the dough into pieces according to your preferred size for broukas, cover them with plastic wrap, and let them rest in the refrigerator for 15 minutes.

Remove the dough from the refrigerator and roll it out thinly using a rolling pin.

Use a pizza cutter or pastry wheel to cut rectangles about 5cm long and 4cm wide, then make cuts along their length.

Detach the cuts, then cross them over to form a diamond shape in the end.

Heat the frying oil in a pan and warm your honey in a bain-marie.

Fry the chabakias and once done, roll them in the honey, then sprinkle with sesame seeds.
