Duck magret with chouchen and apples
Taste the Breton version of duck magret with apples!

Once peeled and finely chopped, fry the onion and shallot in a pan with the chouchen.

Add the peeled apples cut into small cubes.

Season with a pinch of cinnamon, mace, salt, and pepper.

Do not let the apples reduce to a puree, and wait until the onions are well cooked.

Transfer the mixture to a baking dish, and baste it again with a splash of chouchen.

Fry the duck magret in the pan by adding chouchen, salt, and pepper.

Continue cooking for about 5 minutes on each side.

Slice the duck magret while it is still pink.

Place these slices in the oven with the dish of apples and onions for a few minutes to allow the flavors to harmonize and complete the cooking.
