Flamed crepes suzette with grand marnier

Prepare your crepes according to your favorite recipe, keep them warm.

In the stainless steel pan, mix the zest of an orange, butter, sugar pieces, orange juice, 1 cup of Cognac, and 1 cup of Grand Marnier.

Heat everything in the oven (120°C - thermostat4) or on low heat and stir.

Be careful not to ignite the alcohol, which will slowly evaporate.

Then dip each crepe one by one into this mixture, fold them into quarters, and let them sit in the warm pan.

Baste well with the remaining sauce and sprinkle lightly with sugar.

Leave the pan in the oven for 5 minutes; the crepes should be served very warm.

Heat the leftover Grand Marnier in a saucepan and flame the crepes.
