    Preheat the oven to 210°C (gas mark 7).

    Peel the apples, remove the seeds and cut them into small pieces.

    Mix the sugar, vanilla sugar, cinnamon, and honey in a microwave-safe dish.

    Add the apples then place the dish in the microwave for 5 minutes.

    Stir then put the container back to heat for another 2 minutes.

    Roll out a disc of puff pastry in a buttered and floured mold.

    Poke the dough with a fork.

    Pour the apple mixture over the dough.

    Add the bean and close the tart with the other disc of dough.

    Score the dough with the tip of a knife.

    Brush with beaten egg yolk.

    Bake in the oven for about 30 minutes until the pastry is golden.
