Orange crème brûlée

Zest the oranges and squeeze them to obtain their juice.

In a saucepan, heat 80 cl of milk with the orange juice and zest without allowing the milk to boil.

Split the vanilla pod in half and add it to the milk.

Separate the egg whites from the yolks and whisk the yolks, then pour in the hot milk and mix vigorously.

In a bowl, dissolve the flour in the remaining milk and then incorporate everything into the egg mixture.

Whisk well and pour back into the saucepan.

Simmer over low heat without boiling until thickened.

Divide the cream among ramekins and sprinkle the surface with caster sugar.

Caramelize under a grill or with a blowtorch.
