    Melt the chocolate in a bain-marie without stirring; once it is melted, add the butter and mix until you obtain a smooth paste.

    Remove from heat then add the four yolks and the rum while mixing.

    Whip the whites to form stiff peaks by gradually incorporating the sugar.

    Pour the chocolate sauce over the whipped cream and gently fold.

    Decorate with a thin julienne cut from the orange zest.
