Slice your zucchini lengthwise into thin strips (no more than 3mm thick)

Let the zucchini drain for 20 minutes in a colander with salt between the slices, then rinse them under cold water and pat dry with paper towels

Place the slices in a mixing bowl, then add enough flour to coat all the slices, mix until they are fully covered with flour, and let them rest in the fridge for 10 minutes

Prepare your frying pan or deep fryer with oil, and once hot, fry the zucchini slices until they are golden brown
