Three criteria really matter:
- Material: non-stick steel (good value), ceramic (even baking, heavier), silicone (easy release, less crispy) or professional tinned steel (crispiest crust, requires maintenance).
- Diameter: 9 inch for 4 people, 11 inch for 6-8, 12 inch+ for large gatherings.
- Removable bottom: a real plus for unmolding without breaking the crust. Essential for delicate tarts.
