    Separate the flour into two parts.

    Dissolve the yeast in a little water (one glass is sufficient).

    Mix half of the flour with the milk, then let it rest for 1 hour and 30 minutes to 2 hours in a bowl covered with a damp cloth.

    While this is resting, cut the candied oranges into pieces.

    When the dough has risen, add the remaining flour, butter, sugar, whole eggs, egg yolks, milk, and salt.

    Once the mixture is homogeneous, add the oranges.

    Cover the dough and wait 45 minutes.

    Preheat the oven to 180°C (th.6).

    Put the dough in a buttered Colomba mold or roughly shape it like a dove.

    Mix the remaining egg yolks with some milk, then brush the brioche so that it browns.

    Sprinkle with white sugar and almonds.

    Bake for 40 minutes, then increase the heat to 200°C (th.6-7) for 10 minutes.
