    Soak the chickpeas in water overnight before rubbing and peeling them.

    Sauté the finely chopped onion and garlic in oil.

    Add the chickpeas.

    Cover with water and simmer for 2 hours.

    Drain the chickpeas, then make a puree by adding the other ingredients.

    Add a generous pinch of paprika and a drizzle of olive oil to the hummus.
