    Choose preferably a clay pot that you will rub with a crushed garlic clove before using it.

    Heat the white wine and cheese until you get a fondu.

    When the wine-cheese mixture has become homogeneous, you can add 4 tablespoons of maize flour previously diluted in a little water, along with pepper and mace.

    Thanks to the Maizena, your fondu will be lighter.
