Peel the apple and cut it into large cubes

Separate the yolk from the egg white and reserve the white.

Cut the blood sausage into four pieces. In a hot pan, brown the apple pieces and the blood sausage in butter, sprinkle with sugar and caramelize for two minutes.

Cut each phyllo sheet into four strips then cut each strip in half.

Garnish four buttered muffin molds with phyllo strips.
