    Chop the veal finely or have it chopped finely.

    Peel and mince the shallot.

    Knead the veal, shallot, salt, pepper, and finely grated nutmeg.

    Add the whole egg beaten.

    Form two croquettes, roll them in breadcrumbs and cook and brown them gently in butter for 6 to 7 minutes on each side.

    Clean and slice the mushrooms into strips.

    Sauté them quickly in a pan with melted browned butter.

    Season, pepper, nutmeg.

    Mix cream with egg yolk and add it.

    Pour into the pan, stir gently for 3 minutes on low heat and serve hot in a warm dish, placing the croquettes on top.
