    Mince the onions.

    Peel and cut the carrots into thin slices.

    Cut the meat into pieces.

    In a sauté pan, heat the oil then add the floured meat.

    Brown the pieces on all sides, then remove them.

    Put the carrots and onions in instead and cook for about 3 minutes, stirring occasionally.

    In a cocotte, add the meat and vegetables, then the beer, bouquet garni, salt, and pepper.

    Cover and put the cocotte in the oven for 2 hours.
