Cut your beef very finely, in brunoise.

Pour mix the ingredients, put the egg yolk, mustard, onion, ketchup, capers, tabasco, salt, and pepper in a bowl, then mix while adding the olive oil.

Add the meat, mix (or blend), then place half of the preparation on a plate with a large spoon and form a steak by flattening it; do the same with the second part.

To decorate, don't hesitate to add a second egg yolk in its shell at the center of the tartare and sprinkle with flat-leaf parsley.
