Start by opening the mussels and set them aside in a container. In a pan or pot, sauté the bell peppers and onions, then add the tomatoes in a base of olive oil, stirring continuously to obtain a homogeneous sauce. Let it reduce for 30 to 40 minutes. Add the mussels in their shells to simmer for another 15 to 20 minutes, mixing so they absorb the sauce. Serve with homemade fries or a salad.
