    Peel and wash the potatoes.

    Cut them into fries about 1.5cm wide.

    Wash the potatoes again then dry them with a clean towel.

    Heat the oil to 150°C in a deep fryer.

    Submerge 1/3 of the potatoes in the oil to blanch them.

  6. 6

    Remove the basket from the fryer and let the fries drain.

  7. 7

    Heat the oil to 180°C.

  8. 8

    Submerge the fries again in the oil until they are golden brown.

  9. 9

    Remove the fries, drain them on absorbent paper.
