Firstly, peel the zucchinis and cut them into small cubes.

Do the same with the eggplant and tomatoes (you can remove or keep the skin).

Sauté the finely chopped onion in a tablespoon of olive oil.

When it becomes transparent, add the zucchinis and eggplants.

Stir well to mix all ingredients.

Cook over medium heat, covered,

for 4 minutes, then add the tomatoes and stir again.

Cook for about another 5 minutes, then add salt, pepper, and spices (dose according to taste).

10 more minutes over medium heat, stirring occasionally.

At the end of cooking, add the cream and stir thoroughly to incorporate it into the rest of the preparation.
