Fry the cleaned and sliced endives with 40 g of butter, orange juice, and honey.

When they are tender, add salt and pepper and transfer everything into a gratin dish.

Cut the log into slices and cover the endive compote with it. Mix the spice cake, speculoos, and mix in with the remaining 40 g of butter and spices.
