Peel the cucumber and cut it into very thin slices (using a knife or a mandoline).

Squeeze with paper towels (or let it drain if you have time).

Slice the tomatoes thinly. Finely chop the red onion and the shallots. Cut the surimi into very thin slices and add it to the cucumber, tomatoes.

And to the onions. Prepare the sauce with the cream cheese, cream, season to taste with curry powder, herbs, garlic, salt, and pepper.
