Cut the tomatoes into small cubes and mash them with a fork to make a puree.

Chop the beets into small cubes.

In a mixing bowl, mix the goat cheese with heavy cream or sour cream. Wash and finely chop the chives, then add them to the mixture.

Season with salt and pepper and mix well.

Put this preparation in a large piping bag.

Place a layer of tomatoes at the bottom of the verrine.

Add a layer of goat cheese mixture, then a layer of beets.

Repeat for the other verrines until all ingredients are used up.
