Avocado purée with shrimp
A creative mashed potato dish for a quick starter!

Mash the flesh of the 6 avocados in a mixing bowl to make it smooth and creamy.

Drain the shrimp thoroughly to remove as much water as possible.

Add the shrimp to the avocados.

Blanch the tomato (remove the stem, plunge into boiling water for 15 seconds then immediately into cold water and peel).

Dice it and add it to the avocados and shrimp.

Extract the juice of 1 lemon and incorporate it into the mixture.

Add the thick cream followed by a drizzle of olive oil.

Adjust the seasoning with salt, pepper, and tabasco.

Serve with wedges of lemon.
