Chop the shallots and crush the garlic.

Slightly brown them in a pan with half the butter.

Dust the halibut slices with flour and sear them in the same pan where the shallots are (2 minutes on each side).

Remove them and keep warm.

Pour in the white wine, add the tomato extract, and add the remaining butter, salt, pepper, and a spoonful of chopped Provence herbs.

Stir well to obtain a creamy sauce.

Place the halibut slices in the pan and cook very gently for about 20 minutes.

The sauce should only simmer without boiling.

Serve the halibut slices on a warmed platter.

Taste the sauce and adjust the seasoning, which should be well flavored.

Cover the fish slices with the sauce and sprinkle everything with a mixture of chopped Provence herbs.
