Preheat the oven to 210°C (Th. 7).

Blanch the tomatoes for 10 seconds in boiling water, cool them down, and peel them.

Core the tomatoes and roughly chop them.

Sauté the peeled and chopped onions in oil, add the bacon bits.

Add the chopped tomatoes and Provence herbs, season to taste.

Let it simmer for at least 20 minutes until all the liquid has evaporated.

Mix with your fingertips all the crumble pastry ingredients (flour, nuts, butter) to obtain a crumbly pastry.

Butter a gratin dish, then pour in the tomato and onion mixture with bacon bits.

Cover with crumble pastry and bake for 15 minutes.
