    Blend the fresh fruits with 20 g of sugar (or drain the fruits in syrup and mix the juice with the 20 g of sugar).

    Dip the spoon cakes and layer them in a deep dish (oval).

    Cover with fruit.

    Mix 50 g of sugar, 3 egg yolks, add the mascarpone and whipped cream.

    Add the beaten egg whites until stiff peaks form.

  6. 6

    Pour this cream over the fruits and refrigerate (normally overnight, at minimum 3 hours).
