    Separate the egg whites from the yolks.

    Add and whisk the powdered sugar and vanilla sugar into the egg yolks.

    Add the mascarpone and mix until you get a smooth mixture.

    Beat the egg whites to stiff peaks and fold them into the preparation.

    Blend or crush the speculoos cookies.

    Distribute in 6 verrines a layer of crushed speculoos, a layer of mascarpone cream, and add some washed and sliced strawberries.

    Repeat once more.

  8. 8

    Decorate each verrine with a large strawberry.
