Rum Coconut Chicken

In a pot, pour the dark rum then heat for 2 minutes to evaporate the alcohol.

When the rum is warm, add 10 cl of soy sauce and 2 limes' juice.

Chop the onions, remove the seeds from the peppers, cut the lemon zest as well as the ginger into small pieces then keep everything in a bowl.

With a knife, open each piece of chicken then place them in a dish with the marinade from the pot and your spice mixture.

Cover and let marinate for 1 hour, then cook in a cocotte with the marinade sauce by adding coconut milk and flour to thicken the sauce, for 30 minutes.
