    Prepare the crepe batter with flour, eggs, milk, and lastly add the melted butter and salt.

    Let it rest for at least 1 hour.

    Gently sauté the finely chopped onions and bell peppers in a pan with a knob of butter or olive oil over low heat.

    Halfway through cooking, add the peeled and seeded tomatoes and crushed garlic.

    Season with salt and pepper, and cook for 15 minutes on low heat.

    Cook 8 beautiful crepes.

    Garnish them with ratatouille and Bayonne ham, fold in quarters, and serve 2 crepes per plate.
