Sauté the mushrooms in a pan with butter. Sauté 2 chopped onions in a pan with butter. Cut the chicken giblets into small cubes. In a mixing bowl, combine the giblet cubes, bread soaked in milk and squeezed out, sautéed mushrooms, eggs, chopped parsley, salt, and pepper; mix well. Stuff the chicken with the mixture and sew up the opening. Cook in a Dutch oven for 2 hours and 30 minutes, basting frequently with chicken broth. Remove the stuffed chicken from the Dutch oven and sauté the chopped onion in the cooking juices. Cut the stuffed chicken into pieces and coat with sauce, sprinkling with chopped parsley.
