Boil the olives for 5 minutes.

Remove them, drain, and chop them.

Peel and cut the potatoes and cook them in lightly salted water for 20 minutes.

Add the chopped onions, olives, parsley, eggs, and shredded cheese.

Season lightly with salt, mix well, and form small walnut-sized meatballs.

Roll them in flour, pressing slightly to form small patties, and fry them in very hot oil until golden brown.

Place the fritters on paper towels, then arrange them on a plate and drizzle them with lemon juice just before serving.
