Roll out the puff pastry and cut triangles (5cm wide and 8 cm long).

Finely slice the half onion and sauté it in a pan.

Meanwhile, chop the ham and cheese into small pieces.

Line the base of the triangles with some ham, cheese, and onion.

Then take the tip of the triangle and fold it over the filling.

The result should resemble a mini croissant.

Next, brush the croissants with egg yolk.

Bake for about 20 minutes at 180°C. Serve hot or cold.
