Cut one of your pomegranates in half, then extract the arils while keeping the white membranes that you will add to a mixing bowl with the ginger. In a bowl, mix 1 tablespoon of balsamic vinegar, port wine, and olive oil, then add the pomegranate seeds and let them soak for 30 minutes. In a pan, heat a drizzle of olive oil and 20 grams of butter, then cook your beef fillets for about 5 minutes on each side, seasoning with pepper and salt at the end. Distribute the beet leaves in each plate, place the beef fillets on top, and cover with the pomegranate sauce. Cut the second pomegranate into 3 or 4 slices to decorate the dish just before serving.
