Carrot Flan with Bacon

Scrape, peel, and finely chop the carrots and onions.

Sauté them separately in butter with 1 thyme sprig, salt, and pepper.

Fry the bacon lardons in a frying pan on high heat without any fat and set aside.

In a mixing bowl, beat the whole eggs with the flour diluted in a little milk, cream, salt, and pepper.

Add the remaining milk bit by bit then continue beating until you obtain a well homogeneous mixture.

Once the carrots are cooked, mix them with the onions and lardons, then pour into the buttered terracotta ramekins.

Cover with the egg mixture, then bake for 30 minutes in a hot oven.
