    Peel the eggplants and cut them into large slices.

    Put the flour in a mixing bowl and add salt and pepper.

    Break in the yolks of eggs and work the dough by gradually incorporating the beer until you obtain a smooth and homogeneous dough.

    Mix in the 3 beaten egg whites whipped to very stiff peaks, dip the eggplant slices in the frying dough and plunge them into hot oil for frying.

    When the fritters are well golden, drain them.
