    Take 4 beautiful eggplants, cut the two ends, keep the skin and dry them; slice them thinly at 2 to 3 mm thick.

    Season the tomato sauce with salt and pepper.

    In a deep skillet, put enough frying oil (1/4 for a 30cm skillet), and fry the slices until they take on a well-golden color.

    As the eggplants cook, arrange them in a baking dish.
