Boil water in a Dutch oven and plunge the lobsters for 3 minutes. Drain the lobsters and cut them in half lengthwise.

Remove the gray part from the head and keep the coral in a bowl.

Blend the coral with butter.

Add Calvados and cream, whisking everything together.

Partially stuff the lobsters with half of the mixture.

Preheat the oven to broil.

Place the lobsters in the oven and when the stuffing begins to brown, pour on the rest.

Bake for an additional 5 minutes.
