Chicken with Cucumber and Mushrooms

Slice the chicken breasts and mushrooms.

Melt butter or oil in a pan and fry the chicken pieces, reserving them.

Fry the sliced mushrooms until they have given off all their moisture.

While this is cooking, peel the cucumber, cut it lengthwise into two halves, and remove the seeds.

Cut the cucumber into 5cm segments.

Add to the cooked mushrooms the chicken, chicken stock, cucumber, soy sauce, heavy cream, lemon juice, and let simmer for about 30 minutes.

Serve with rice.

If the sauce is too liquid, thicken it with cornstarch.
