Prepare the broccoli, wash them and separate them into small clusters.

Peel the broccoli stalks and cut them into small cubes.

Wash the vegetables, cut them into cubes.

In a casserole, sauté the vegetable cubes and finely chopped shallots in the butter.

Add the broccoli; if desired, add some fine herbs as well.

Cover with broth and bring to a boil. When cooked, puree the vegetables without the broth using a food mill, and stir in the cream.

Heat for 5 minutes on low heat, season with salt and pepper, and enjoy!
