    Cut the fish into pieces.

    Clean and slice the leeks, peel and chop the shallots and garlic, crush the tomatoes.

    Put all these vegetables in a pot with the bouquet garni, seasoning, water, and wine.

    Add the fish head and gently bring to a boil, let simmer for 30 minutes.

    Remove the fish head then put the other pieces in, let cook for 10 minutes.

    Sprinkle with chopped parsley and serve well hot.
