    Prepare the puff pastry dough.

    (See preparation), let it rest for 20 minutes. Slice the chorizo into very thin slices.

    Fry them in a greased pan for about 5 minutes.

    Roll out the puff pastry to a thickness of 2 cm.

    Cut out circles with a diameter of 8 cm, make an indentation in the center by holding the rolling pin vertically.

    Brush the edges of the pastries with beaten egg.

    Place these circles on a buttered baking sheet.

    Bake for half cooking at 180°C. Fill the center with shredded mozzarella, half a cherry tomato, and slices of chorizo.
