    Slice the mushrooms and sauté them in a pan with some oil until all the water has evaporated. Add the minced giblets, salt, and pepper. Cut the bacon into small pieces. Sauté 2 chopped onions, chopped garlic, and the small pieces of bacon in another pan with a bit of oil; season with salt and pepper. Combine both preparations in a mixing bowl, add the squeezed bread crumbs, egg, salt, and pepper, and mix well. Stuff the pheasant with the mixture, then close the bird, place it in a casserole dish, add oil, and brown on all sides by gently turning for 25 minutes. Add finely sliced onions and moisten with a large glass of white wine; season with salt and pepper, and cook covered over low heat for 55 minutes, turning the pheasant from time to time.
