    Slice your carrots and lemon into rounds, and chop your onions, parsley, and bay leaves. Wash and remove the head, fins, and bones from the herring if necessary. In a saucepan, pour 3 dl of dry white wine, 1 dl of white vinegar, and bring to heat while adding the parsley, bay leaves, thyme, carrots, and onions for 2 to 3 minutes. Allow the mixture to cool for a few minutes, then serve your herring rolled up and secured with a toothpick, drizzling one or two tablespoons of the vinaigrette over them, and arrange lemon slices on each plate.
