Wash the leeks then chop them.

Melt 20 grams of butter in a frying pan.

Add the leeks and sauté for 5 minutes on high heat, then deglaze with 10 cl of water.

Cover the pot and cook for 15 minutes on low heat.

Open the mussels in a pot and remove the shells.

Strain the cooking liquid (coffee or tea strainer), add it to the leeks, and continue cooking uncovered until the leeks are well tender.

Pour the cream into a pan and bring to a boil.
