Preheat the oven to thermostat 6/7 (200°C).

Poke the skin of the duck breasts.

Season and pepper the duck.

Brush the pieces with olive oil.

Bake and let them brown for 15 minutes.

Peel and chop the onion and garlic with the peeled and grated ginger.

Heat the remaining oil on medium heat and sauté the mixture for 1 minute.

Drain the pineapple, add the syrup to the saucepan with the above mixture; add the mustard and coriander seeds, reduce for 5 minutes.

Add the honey, vinegar, and soy sauce.

Cover and set aside.

Continue cooking the duck until it is well browned by basting it every 5 minutes with the prepared sauce in the saucepan.

Increase the heat under the saucepan, caramelize the pineapple slices for 5 minutes.

Serve the duck pieces with the pineapple.
