In a pot of salted boiling water, cook the quinoa then drain it in a shallow dish.

Mix the quinoa, meat along with the beaten egg, chopped onion and parsley, season with salt and pepper, then form into balls that you will coat in flour.

Drain the canned tomatoes and blend them with the Provence herbs and lemon juice, then heat this sauce in a pot for a few minutes on low heat.

In a hot pan, brown the meatballs in olive oil.

Serve them covered with tomato sauce.
