Prepare the filling for the samosas, finely chop the dried tomatoes, crumble the feta, and finely chop the mint if you wish to add it. In a bowl, mix everything together, season with pepper but do not add salt2. Preheat the oven to 210°C at setting 7. Line a baking sheet with parchment paper.3. Cut your phyllo dough in half, fold the rounded edge to form a rectangle. Place a spoonful of your filling on one end, then fold your phyllo dough into a neat samosa shape. Place it on the lined baking sheet and repeat the process for all the samosas.4. Bake the feta and dried tomato samosas in the oven for about 8 minutes or until they are golden brown and crispy. Once the samosas are cooked, remove them from the oven and serve them immediately with a salad.
